Rose Syrup
This recipe is from "Cocktails by Flavor" (2013).

Makes 2 cups

Ingredients

3-4 organic red, scented, garden roses
2 cups caster sugar
11/2 cup water

Preparation

Wash rose petals. Combine the sugar and water in a small saucepan and heat the mixture over medium heat, stirring occasionally, until the sugar is dissolved. Reduce the heat to low, add the rose petals and simmer very gently for 15 minutes, stirring occasionally (do not boil).
Remove from the heat and let cool 2-3 hours to allow the flavours to develop. Strain, then bottle.

Rose Champagne Cocktail

Rose syrup adds a sweet, floral touch to Champagne.

Makes 1 drink

Ingredients

2 teaspoons rose syrup
Brut Champagne or sparkling wine

Preparation

Add the rose syrup to a champagne flute, then fill with Champagne.
